Serves 8 – 10 

Ingredients 

75g cornflour
100g caster sugar
375g Greek yoghurt
4 eggs
the finely grated zest of one lemon
a pinch of salt
6 Royal Gala apples
2 tbsp caster sugar for dusting
a little icing sugar for dusting

You need a 22 cm (approx) round spring-form cake tin, the base lined with baking paper and the
sides well-buttered.

Method 

Preheat oven to 180°C.
Place cornflour, sugar, yogurt, eggs, lemon zest and salt in a bowl and combine very well.

Peel all the apples. Core and dice 4 of them. Cut the other 2 apples in half, remove the core,
then cut into 3mm slices.
Mix the diced apples with the yoghurt preparation.

Starting from the edge of the tin, arrange the apple slices over the cake mixture, overlapping
them. Sprinkle the top with the extra caster sugar and bake in the preheated oven for about 50-60 minutes.

Remove the cake from the oven and allow it to cool for about 10 minutes.
Dust with icing sugar before very carefully removing it from the cake tin.
