This beautiful French Lavender Cake is perfect for Birthday Parties, Tea Parties, French themed parties & Baby Showers too. It reminds me of the beauty of Provence.

Recipe
2 cups plain flour
1 1/2 cups granulated sugar
3 tsp baking powder
1 tsp salt
1/2 cup of your favourite oil eg olive or vegetable
3 eggs (room temp)
1 cup milk
1 tbs French (or Tasmanian) lavender extract paste
1/3 cup dried lavender
Frosting
1 cup unsalted butter (softened)
5-6 cups icing sugar
1/4 cup double cream
food colouring (optional)
Method
Preheat oven to 180 C (or350F)
Grease four 15.5cm (6″) cake tins and line with baking paper, set aside.
Combine flour, sugar, baking powder, salt, sift to cobine. Add oil, eggs, milk and lavenders. Stir to combine (either by hand or electric mixer) until combined and lump free.
Pour the batter into your pans. Kae for 20 to 30 minutes or until a toothpick inserted in the centre comes out cleanly.
Allow the cakes to cool in their pans for 30 minutes before carefuly transferring to a wire rack to finish cooling.
Once cakes are cool, being working on the frosting
Frosting
Begin whisking softened butter (by hand or mixer) and begin slowly adding icing sugar 1/2 cup at a time up to 2 cups. Add a splash of cream. Continue adding sugar until a desired consistency is achieved. If the frosting is too thick you can add more crea. Add a layer of frosting between each cake layer. Once you get to the top layer, cover the whole cake in remaining frosting and decorate with the beautiful swans or ballerina birthday train decor found at Little French Heart. Or, simply add stalks of lavender and flowers. Voila!
